:: Iz as Cinderella + some granola ::

"I want to put my Cinderella dress on".. that's what I heard over and over until I said, 'okay'.. It was so close to nap time so I was trying to avoid it until after, but, oh well!  She couldn't wait to get it on so she could match her Cinderella doll.

A friend brought this granola over for book club and it was so good, I had to get the recipe.. so simple too, so I am sharing :)..
Granola
2 1/2 C Gluten Free Rolled Oats (or regular, whatever you prefer)
2 T Ground Flaxseed
1/2 cup Raisins
3 Tb Vegetable Oil
2 Tb Maple Syrup
2 Tb Honey
1/4 tsp Sea Salt
1 cup Sliced Almonds
about a 1/2 C coconut (optional)
Preheat oven to 300°F.
In a medium sized bowl mix together oats, coconut, almonds and salt. In a separate bowl mix honey, syrup and oil (oil will stay mostly separated, that’s okay). Combine the honey mixture with the oat mixture and stir until evenly coated. Pour the mixture onto a greased baking sheet with sides and spread to cover evenly. Bake for 30 minutes, stir, bake another 5-10 minutes depending on preferred doneness. In a small bowl mix the raisins and flaxseed meal. Stir the raisin mixture into cooked granola.
*I didn't cook mine as long because our oven is crazy, so you might just check it every so often so it doesn't burn.. burnt granola is the worst, believe me, I know from experience!

Weekend with my girls!

We have had some great cuddle time in the mornings after Iz wakes up.. this is her attempt at taking a picture of us- just her feets :).
Having tea and doing a puzzle.. Isabelle has gotten so good at this, she can put most of it together by herself, it's so fun to watch!

*side note: this would be awesome if there wasn't a little 2 year old in your bed saying, "mommy, I want to go downstairs, I want bwekfist", over and over again- for those of you who know me.. she's so me.. ugh!!  No, I don't want to go downstairs, I just want to keep sleeping!  That response doesn't translate well to her, she just says it louder and gets more whiney, which makes me cave and get out of bed because I don't want her to wake up Lillian.. oh the joys ;)!

I just love her face when she falls asleep on me and it's so hard to get a picture of it.
We had a Mexican themed dinner group Saturday night and we were supposed to bring a side, so I made this delicious Mexican Rice and Bean Casserole.  I totally spaced {of course} and didn't get a picture of the finished product with the cheese melted on top.. it was pretty!
I adapted it a little from 'Food and Wine'.

1 tsp vegetable oil {I used coconut oil}
1 onion, chopped
2 cloves garlic, crushed
1 14 oz can sliced mushrooms {I didn't add mushrooms, Jacob's not a fan of them.. and I thought it was a little strange they were in it in the first place}
1 large red pepper, chopped
1/2 cup water
3/4 cup converted rice
1 19 oz can red kidney beans, drained and rinsed {I also added 1 can of black beans}
1 19 oz can diced tomatoes {didn't have these, so I used a can of Rotel and some salsa}
2 tsp chili powder
2 tsp cumin
1/4 tsp salt
1/4 tsp ground pepper
1 cup shredded low-fat cheddar cheese
1/4 cup sliced green onion

In a large skillet heat oil over medium heat. Cook onion, garlic and red pepper until tender, about 5 minutes. Add water, rice, mushrooms, beans, tomatoes, chili powder, cumin, salt and pepper. Simmer covered until rice is tender and most of liquid is absorbed, about 25 minutes. Trasnfer to a baking dish and sprinkle with cheese and green onions. Bake at 350F for 15 minutes until cheese melts. If you're low on time you can just pop it in the microwave or under the broiler for a few minutes to melt the cheese. Serve with a dollop of sour cream.

Iz is so funny, she is always saying, "she can't run, she can't talk, cause she's too little.. she's just a little baby.. she cries, so then she's probably hungry.. shh, she's sleeping, we gotta be quiet, because she's sleeping".. such a smart one!  You can tell what we have been telling her and reading in her books.

:: snowman with daddy ::

Isabelle was so excited to build a snowman, so dad came home after her nap to build one... pure excitement!

Iz was so cute, she was asking if the snowman could talk to her.. I think the whole 'man' part confused her a bit because she was also a little unsure of him!
She didn't want to get very close to him at first {maybe it was the crazy arms, I don't know?}.. she wouldn't take her eyes off of him, like he was going to reach out and grab her!
She got brave and then wanted to touch him.. the whole thing was pretty funny!

Hurray for snow!!

And this face!  I love that scowl!
 I could take a million pictures of this little girl.. I know they all pretty much look the same, but it's so hard not to keep taking them {as you will see below}!
We woke up to such a blizzard, it was crazy- so pretty, but crazy!  Isabelle loved watching it and couldn't wait to get out and play in it.
Izzy girl all geared up to go play in the snow with her cousins!  I was sad not be able to take Iz outside to play in the snow, but so thankful to have Courtney and her cousins take her out and play!
I was happy to get these pics from Courtney so I could see Izzy girl having fun in the snow.

This is just the best, right after I feed her, she is like comatose, has the cutest 'passed out' faces!  I remember loving that from when I would feed Isabelle too.

She was still kind of swollen around her eyes, poor thing.
Had to include our pooches.. yes, we still have them ;)!
We were totally snowed in, it was insane!  Lillian and I didn't leave the house for like 3 days.. not my idea of fun.
Check out the amount of snow on our table.. so crazy!
