:: some blueberry muffins ::

my little munchkin loves to go to the 'mini house' and get her wagon out...
 she has to carry the keys.
 we picked up a bunch of boxes {you can kind of see them to the left of iz} from a friend at work that just moved back to lawrence and it kind of made the whole move thing a little more real :(.
just looking for dad.

i got gwyneth paltrow's new cook book, 'my father's daughter' from the library and she has some pretty great recipes in it {not all vegan, she has a lot with meat too} - i might have to purchase.  my mom came on sunday and i had been wanting to make these muffins so we made them after isabelle went to bed.

:: healthier blueberry muffins ::
{made from spelt flour, don't have any sugar and are vegan - they are still delicious}
1/2 c veggie oil
1/2 c soy milk
1/2 c real maple syrup
1/4 c light agave nectar
1 c white spelt flour {we couldn't find both spelt flours at the merc so we just used 2 c of white}
1 c whole spelt flour
2 tsp baking powder
1/2 tsp fine salt
2 1/2 c fresh blueberries {we used frozen, that's why our batter looks all purple} 

oven to 375 degrees
line a 12 c muffin tin 
mix wet ingredients together, stir in the dry ingredients, and fold in the blueberries.  divide among the muffin cups and bake until a toothpick tests clean and muffins are golden brown, 25-30 minutes.  let cool and eat :)! 

oh and somehow isabelle knew that we had made muffins because she immediately reached for them on the counter in the morning and had to have one, and she LOVED it, ate the whole thing pretty fast!  a nice healthy little muffin for the littles!

  1. Just made these, used 2 cups of white four and olive oil instead of veggie. We will see what Miss Olive thinks when she wakes up from her nap.
