I know I have posted this recipe before, but I have been changing it up more lately so thought I would share it again.. + they are so good! Jacob and I {and Iz} have been eating them like crazy! I always double the recipe now.
recipe adapted from 'gimme some oven'
No-bake Energy Bites
Ingredients
- 1 cup (dry) oats {I use old fashioned oats.. like to get them from the bulk section}
- 2/3 cup toasted coconut flakes {I don't always add this, just depends if we have it or not}
- 1/2 cup peanut butter {I have been mixing 1/2 raw almond butter + 1/2 peanut butter}
- 1/2 cup ground flaxseed or wheat germ {I usually do equal parts of both + chia seeds}
- 1/2 cup chocolate chips (optional) {I split this with craisins and a handful of pepitas {pumpkin seeds} if we have them}
- 1/3 cup honey {I will add a little agave nectar to help make up the amount of honey when I double the recipe, just to not use as much honey}
- 1 tsp. vanilla extract
Method
Stir all ingredients together in a medium bowl
until thoroughly mixed. Let chill in the refrigerator for half an hour.
Once chilled, roll into balls of whatever size you would like. (Mine
were about 1" in diameter.) Store in an airtight container and keep
refrigerated for up to 1 week.
Makes about 20-25 balls.
I just love these because they are so versatile with what you have/put in them

Sometimes food is just so pretty.. I couldn't resist taking a picture of our grilled new potatoes, sweet potatoes, squash + carrots = yum! I just used the mandolin slicer, added some coconut oil {about a T, but depends on amount of veggies.. this was a lot} and sprinkled seasonings, wrapped them up in some foil and put them on the grill for about 20 minutes...
