My mom and I learned how to make this at a cooking class at The Merc and just decided to make it today... don't let the ingredients scare you, it's so good and you would never know it's made of tofu! We were too excited to eat it so I didn't get a picture of it until it was almost gone!
Here it is:
2 12.3 oz packages of Silken tofu (firm or extra firm, regular or light)
10-12 oz bag of chocolate chips, melted
2-4 T sugar
1 tsp vanilla
Place tofu in food processor (or blender) for one minute Pour in melted chocolate chips and vanilla. Blend until creamy. Add sugar to taste and blend until very creamy and smooth, stopping several times to clean sides of food processor w/a rubber spatula. Place in a graham cracker pie crust (we use a whole wheat graham crust and it's amazing!) to create a fabulous French Silk Pie or chill in a bowl to be served as a pudding.... so good!! Enjoy!
